Michelin-starred chef Olivier Elzer, a renowned figure in the Hong Kong restaurant scene with 27 Michelin stars over his 30-year career, has been appointed Consulting Chef at JW Marriott Phu Quoc Emerald Bay Resort & Spa in Vietnam. The resort’s flagship beachfront fine-dining venue has been rebranded as Pink Pearl by Olivier E., reflecting the glamorous, Gatsby-era inspired world of Madame Pearl Collins, an imaginary socialite known for lavish dinner parties. Chef Elzer brings his vibrant French-Mediterranean culinary vision to the restaurant, focusing on authentic yet approachable French classics with innovative regional twists.
Chef Olivier, raised in Alsace and having worked alongside legends like Pierre Gagnaire and Joel Robuchon, offers a menu inspired by the flavors of France’s Côte d’Azur, enhanced with Mediterranean touches and local Vietnamese ingredients. Signature dishes include locally-sourced Bonito cooked over charcoal and a Provençal-style Bohémienne with eggplant, tomato, and Parmesan. The restaurant emphasizes seasonal, natural produce from local farmers and fishermen, creating a unique connection between French Riviera elegance and Phu Quoc’s pristine environment. Guests can enjoy curated five- and seven-course menus and a popular weekend Sunday brunch celebrating social gastronomy.
Starting June 2025, Pink Pearl by Olivier E. will launch a permanent menu blending French culinary heritage, Mediterranean influences, and local Phu Quoc spirit, complemented by fine wines selected by Master Sommelier Bertrand Lutaud.
