Try this quick and easy midweek pick me up recipe to make your week go smoother !
Ingredients:
- 400 g Chicken thighs ( sliced into thin strips)
- 2 bunches of chinese broccoli ( can substitute with your favourite veggies)
- 200g mixed mushrooms
- 80g white miso (Shiro) paste
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 cloves garlic ( minced)
- 2 tbsp of grated ginger
- 2 tsp of brown sugar
Steps:
- Combine brown sugar , soy sauce, sesame oil and miso in a bowl . Transfer half the mixture to a small bowl and set aside. Marinate chicken in the remaining marinade.
- Heat up the pan then add cooking oil , ginger and garlic with a sprinkling of salt and stir until aromatic.
- Add chicken and stir-fry for 5-6 minutes until caramelised and remove from pan.
- Add mushrooms to the pan and cook until it softens. Return chicken to pan for another 3 -4 mins before adding the broccoli in.
- Toss remaining miso mixture in when broccoli is cooked until the sauces are coated to the stir-fry
- Garnish with sesame seeds and enjoy 🙂
