Bars are back! To toast the end of the dry spell and to welcome the summer season, Woo Cheong Tea House has shaken up a range of innovative house cocktails made with Chinese teas. Paired with modern Cantonese snacks, these delicious tipples are the perfect way to celebrate the return of Hong Kong’s vibrant bar scene.

 

The cocktails are helmed by Woo Cheong Tea House Bar Manager Karlton Cheung, who employs innovative techniques to reinterpret classics in new and surprising ways. Having grown up in France, Cheung brings together his memories of living overseas and his experiences in Hong Kong to create unique libations that combine elements from the East and the West. In particular, he uses traditional Chinese teas, including jasmine, osmanthus, pu’erh and more, to create speciality cocktails that are balanced in flavour, fragrance and hue. Inspired by the ancient imperial jade seal, Cheung has also created a special stamp for Woo Cheung Tea House and uses it to imprint the restaurant’s motif on blocks of ice as an homage to Chinese tradition.

 

To pair with these elegant Chinese-inspired cocktails, Woo Cheong Tea House’s Dim Sum Head Chef Eric Sun has created a delicious selection of bar snacks that follow the restaurant’s East-meets-West ethos. Highlights include the delectably crispy Deep-fried Noodle Fish, Shichimi TogarashiWontons, Pork, Green Peppercorn, Chilli Oil; and the moreish Deep-fried Squid, Shanghai Style. By combining traditional craft with modern elements, these small plates elevate Woo Cheong’s bar experience to unforgettable heights.
