October marks the start of the hairy crab season, try the Hairy Crab Menu to kick off a flavourful Autumn together with Team Ritzy. Let’s roll up our sleeves for a cracking season!
In celebration of the splendid fall, two MICHELIN Star Cantonese restaurant Ying Jee Club is introducing a special Hairy Crab Menu for the first time ever. Executive Chef Siu Hin-chi handcrafted the menu to allow crab lovers to indulge in this delectable delicacy of the season.
Available exclusively at the peak hairy crab season from 15 October till the end of November, centrepiece of the 7-course Hairy Crab Menu (HK$1,880 per person) is Steamed Whole Hairy Crab (approximately 300 gram each) from Yangcheng Lake, a traditional crowd favourite where hairy crab is steamed to preserve its pure flavor. Filled with hairy crab roe, scallop and shrimp, Steamed Seafood Dumpling with Hairy Crab Meat and Caviar is a golden treat topped with caviar for extra extravagance. There are more dishes , including Braised Tianjin Cabbage with Hairy Crab Meat and Fish Maw and Braised Inaniwa Noodle with Hairy Crab Meat. To round off the meal, Sweetened Ginger Tea with Sesame Glutinous Dumpling, and Chinese dessert Chilled Coconut Pudding with Osmanthus and Yuzu and Glutinous Dumpling with Mango and Egg Yolk Cream are delectable endings to the crab feast.

Executive Chinese Chef Johnny Chan whips up a hearty selection of hairy crab dishes that most definitely make it to your autumn checklist at Sing Yin Cantonese Dining. Featuring six remarkably exquisite hairy crab dishes and selected Nikka Whisky, along with a detailed pairing note for an enchanting dining experience, the menu encompasses incredibly buttery, savory, and sweet steamed fresh hairy crab, a refreshing braised seafood broth with bird’s nest and hairy crab roe, and sautéed king prawn with crab meat and hairy crab roe. There are even appetizing baked crab shell stuffed with crab meat, onion and hairy crab roe, and succulent steamed minced pork dumpling with hairy crab roe.
Kick start and refresh with a variety of signature starters from Appetizer Platter, then indulge in the Braised Shark’s Fin & Fish Maw in Creamy Crab Roe, warming up the stomach with the complexity and rich flavor of crab roe and the treasures from sea. The star of the feast, 200g Steamed Hairy Crab, will satisfy your craving with golden and rich roe inside the lid. Carry on with the main courses including Braised Whole Abalone with Goose Feet in Abalone Sauce which features 6-head South Africa abalone, and the beautifully crafted Baked Stuffed Crab Shell with Hairy Crab Roe, Scallop & Egg White. Towards the end, the rich in texture Signature Fried Rice with Hairy Crab Roe, River Shrimps & Crispy Rice is divine, and finishing up with Glutinous Dumplings in Sweet Ginger Soup to wash away the coldness.

Besides the Steamed Whole Hairy Crab (200g), the menu surprises and delights with courses such as Braised Sliced Fish Maw, Chicken, Bamboo Shoots & Mushrooms with Creamy Crab Roe, Stir-fried Cauliflower Topped with Hairy Crab Roe & Sliced Cured Pork and Scrambled Egg White with Hairy Crab Roe, Seafood & Dried Scallops, which incorporate fresh hairy crab roe and meat filled with plateful richness and sweetness.
