Ritzy Recipe : Chicken Stir-Fry with Miso Sauces

Try this quick and easy midweek pick me up recipe to make your week go smoother !

Ingredients:

  1. 400 g Chicken thighs ( sliced into thin strips) 
  2. 2 bunches of chinese broccoli ( can substitute with your favourite veggies)
  3. 200g mixed mushrooms
  4. 80g white miso (Shiro) paste
  5. 2 tbsp soy sauce 
  6. 1 tsp sesame oil
  7. 2 cloves garlic ( minced)
  8. 2 tbsp of grated ginger
  9. 2 tsp of brown sugar 

Steps:

  1. Combine brown sugar , soy sauce, sesame oil and miso in a bowl . Transfer half the mixture to a small bowl and set aside. Marinate chicken in the remaining marinade. 
  2. Heat up the pan then add cooking oil , ginger and garlic with a sprinkling of salt and stir until aromatic. 
  3. Add chicken and stir-fry for 5-6 minutes until caramelised and remove from pan.  
  4. Add mushrooms to the pan and cook until it softens. Return chicken to pan for another 3 -4 mins before adding the broccoli in.  
  5. Toss remaining miso mixture in when broccoli is cooked until the sauces are coated to the stir-fry
  6. Garnish with sesame seeds and enjoy 🙂
