AIRSIDE Cafe, renowned for its seafood specialties blending tradition and innovation, collaborates with Estrella Damm Inedit for a “Seafood Combo Promotion” this spring. Crafted with Michelin-starred chef Ferran Adrià and elBulli’s wine team, the promotion features a unique wheat beer designed to complement dishes. With a blend of traditional and wheat beer styles and infused with cilantro, orange peel, and licorice, it offers dense bubbles, smooth texture, and a lingering, delightful aftertaste, perfect for pairing with various cuisines.

On Tuesday, 2nd April from 6:30pm, one MICHELIN-starred Estro and the trendsetting Bar Leone will come together to present a special 6-course themed collaboration menu at Estro. This exclusive and one night-only menu will feature an exciting line-up beginning with an Aperitivo to whet the appetite, followed by enticing courses of Insalata di Puntarelle with mackerel, puntarella, orange and anchovy emulsion, followed by the indulgent Carciofi alla Giudia, a flavourful dish that combines artichoke, red prawn, and burrata. The culinary voyage will continue with Spaghetti Cacio e “Pepi”a delightful fusion of Parmigiano, pecorino, and pepper variation. Bottoni all’Amatriciana offers a rich combination of tomato and guanciale, followed by Pollo alla Cacciatora, a succulent dish featuring chicken, tomato, and aromatic herbs. To conclude, guests will savour the classic Tiramisuexuding traditional Italian charm, followed by a Sweet Ending that will leave a lasting impression. The new weekend brunch captures a nostalgic essence that aligns perfectly with Chef Chau’s culinary philosophy of exquisite presentation, innovative concepts and authentic recipe offerings.
