Marco Polo Hongkong Hotel – Cucina

Chef de Cuisine Andrea Delzanno’s exquisite Italian set dinner for 24 and 25 December begins with scampi carpaccio, avocados sauce, lemon oil and oscietra caviar, followed by smoked beef consommé, tortellini stuffed with Parma ham and black truffles. The two main courses are fettuccine with wild mushrooms, slow cooked pigeon breast, pumpkin and baked fillet of halibut with sun-dried tomatoes and almond pesto, mussels and Romanesco purée. The little Santa Claus dessert is a delightful treat.

Highlights of Cucina’s six-course set dinner on New Year’s Eve include the starter of seared scallop, Romanesco, raspberry, hollandaise, wasabi caviar and the main courses of garganelli with lobster, brandy sauce, cherry tomato & basil, and black truffles and baked fillet of Chilean seabass, sautéed clams, coriander, sake, lime. Their white chocolate mousse, champagne jelly, mix berry, white truffles can round off the feast perfectly.

Cucina’s Christmas Brunch offers a selection of antipasti, Italian cold cuts, cheese, seafood, salads and cooked-to-order pastas. Three on Canton will offer international and local cuisines, including gravlax salmon with honey mustard dressing, tortilla rolls with ham and cheese, duck liver mousse with cranberry jelly, oysters, Boston lobster, and snow crab leg.
